
I roasted a 25 pound turkey for
New Years Day, just because I felt like it.
On the table:
- Dark Meat
- White Meat
- Stuffing from inside the bird
- Homemade cream corn (the canned kind is disgusting)
- Green Bean Casserole
- Roasted Carrots with Pearl Onions
- Rich Turkey Gravy
- Garlic Mashed Potatoes
- Crescent Rolls (from a tube, because who cares about the rolls when the food is that awesome).
The next day: I made a Turkey Curry with yellow and red bell peppers, raisins, onion, pineapple juice and medium + mild curry powder. I just toss it all into a casserole dish and bake it at 425 until it's hot. Serve with Basmati Rice and Naan bread.
I also gave my mother a huge grocery bag full of left overs because lets face it, no matter how hard I try I cannot manage to use up a 25 lb turkey without some help. We can only eat so many turkey + stuffing sandwiches! :)
Today: I am boiling the bones and making stock for the soup I shall create tomorrow and just in time as well, I am coming down with something. Nothing a huge pot of turkey soup can't cure (I hope)!
